Hotel and Location

Tucked into the Tarn countryside, about 45 minutes from Toulouse, you’ll find Château De Fiac by The Pavilions – a beautifully restored 19th‑century château transformed into a boutique hotel and wellness spa, with 16 rooms and suites across three floors.   The grounds stretch out over three hectares of parkland, complete with indoor and outdoor pools, all designed to dissolve your to-do list.  Inside feels grand and spacious and modern – think classic French elegance tempered with playful interior design.  There’s a vast terrace at the bottom of the chateau’s steps with spectacular views across the grounds – we sat out here for drinks whenever we had a spare moment.

Room

We stayed in a light-filled room with gorgeous bed, high ceilings and the usual luxe details: soft linens, plush bathrobes plus an excellent view of the grounds.  The bed was gloriously oversized and the room had large windows looking out across the trees.  The décor throughout strikes a balance between characterful and chic. It feels like sleeping inside a magazine shoot, in the best possible way.

Spa

This was one of those spa experiences that’s only possible in smaller hotels such as this:  quiet, personal even, yet with everything you would expect in a luxury spa.  The REVĪVŌ Spa blends Balinese wellness philosophy with French refinement. I loved taking the lift down from the room into the softly lit sanctuary (donned in fluffy bathrobe and hotel slippers of course).  With Icelandic plunge pools, a sauna, a hammam, and indoor and outdoor pools, my partner and I spent a good chunk of our time here and we have no regrets.

I booked the radiance boosting facial.  This option uses Graine de Pastel products from the south west of France, all organic and with pastel – a medicinal plant from the region.  Despite the language barrier, I felt in expert hands as we went through many steps of exfoliating, plumping, massaging. It included a light chemical peel so I had some results alongside the relaxation.  My partner went for the Revivo Spa Ritual – a full body massage combining heat and cold that left her floating.

Food

Dinner in the Château’s Renaissance Restaurant feels quietly celebratory. The menu is sophisticated and decidedly French.  It reflects local, seasonal ingredients – everything we tasted was an absolute treat for the senses.  We started with the beef tartare and oysters, I had the sea bass fillet (delicious) and enjoyed all the personal recommendations from the Chef.  Dessert was deconstructed chocolate mille feuille with sorbet, all with perfectly matched wine.   Breakfast was a decent yet not overwhelming buffet selection and made to order options – of course the croissants were excellent.

The perfect day-trip

While you’re there I recommend a day out in Albi, about 40 minutes drive from the hotel.  It’s a small city with a big visual payoff, all rose red brick and river views.  We began in the Episcopal City – if you go, check out the Palais de la Berbie and its gardens and the Saint Salvi Cloister.  There’s also a charming little square behind the cathedral called the Place Savène with medieval timber houses and pretty streets running off from it.

Make time to see the Cathédrale Ste Cécile and Toulouse Lautrec Museum, and take pause at Brasserie Delapile, stylish but unfussy and lively.  We sat outside and enjoyed a glass of crisp wine in the sun.   Albi is the place to try aligot, a divine signature dish of mashed potatoes blended with tomme fraîche cheese, garlic, and cream.

Side note: make sure you try the blue soap.  Le Pastel d’Albi Chérie is locally made artisanal soap with a beautiful pastel colour that comes from a regional plant.  It’s part of the local craft scene in Albi and made a good gift to take home.

Getting Here

By Plane, Toulouse‑Blagnac Airport is the most convenient entry point—roughly a 45-minute drive through the Tarn countryside.
By Train, travel to Lavaur station, then it’s a ten-minute taxi ride to the Château.
By Car it’s an easy route via the A68, and there’s free parking on-site.

The Verdict

Château de Fiac is really special and everything we could want from a French countryside sojourn.  It’s the best of boutique with a private, luxurious feel and small enough to feel at home.   We loved the spa, the food was deliciously French, and the room was perfect.
