The rise of Agave spirits – especially Tequila and Mezcal – has been undeniable in our fair city. What was once a niche category is now a major player in the capital’s cocktail scene, with new bars dedicated entirely to Agave popping up across town. A new bar getting in on the Agave action is CINCO, a bouji bar set to open on the 5th March by couple Daniel Corrochio and Amy McQuarrie, the duo behind cult Mexican restaurant Corrochio’s.
CINCO will shine a spotlight on Agave and Mexican spirits, delivering an approachable drinking experience and exploration of Mexican culture through an elevated cocktail programme. They’ll be a curated selection of the finest Mexican spirits and tasting flights handpicked by the couple during their extensive travels across Daniel’s native homeland of Mexico, rare tipples and an cocktail list featuring 5 Agave and 5 Mexican spirit serves.
Now, it’s not all about Agave here with 5 considered non-alcoholic cocktails made from zero-proof distillates and Mexican ingredients on the menu.
The cocktail menu will be accompanied by a selection of five small plates, featuring Corrochio’s famed dishes reimagined into bite-sized portions. Up for grabs: Flauta de Pulpo – a blue corn tortilla deep fried with an octopus tentacle, on a bed of jalapeno mash; the signature XO Taco with pork belly on a bed of XO sauce, deep fried with panko and topped with salsa borracha and pink pickled radish; and a Scallop ceviche mini tostada with scallops, samphire, guacamole, shaved carrots, onions, chiltepin and black salsa.
With Agave going from being an under-the-radar, smoky curiosity to a staple in London’s best bars, we’re pretty hyped for CINCO to be opening.
