There may not be many reasons to venture to Tower Hill, but Mexican pop-up bar Cuervo’s Cantina at Skylounge is one of them. High up above the din of the City, the Hilton’s bar has spectacular views of Waterloo and beyond and, if you don’t mind a few cranes with your mojito, allows for some serious spirits in an amazing panorama. The bar will only be around until September – here’s what you need to know:

Skylounge: The Lowdown Cuervo’s Cantina at Skylounge

Skylounge is playing host to a Cuervo’s Cantina for the summer months; you can enjoy frozen margaritas, £20 pitchers of Mexican cocktails and a nice selection of small plates. The Cuervo’s Cantina has been created by Jose Cuervo in association with Skylounge – expect kitsch pop art, fun salsa music and a real Latin American feel. The bar is only open until 9pm, so it’s great for pre-party food and drinks; a good way to start a Friday night we say.

Skylounge: The Drinks Cuervo’s Cantina at Skylounge

There are only 4 cocktails on the bar’s menu, all with a Mexican twist. Go for the frozen margarita; the novelty of a cocktail on tap is simply too great for us. If you like it strong, the Mexican Mule has a nice kick also, excuse the pun.

Skylounge: The Food Cuervo’s Cantina at Skylounge

The pop-up bar is offering a small menu of Mexican sharing food; tacos loaded with sour cream and cheese, nachos with tomato salsa and cheese, guacamole with cheese. Ok, it’s a lot of cheese. Ask for the sweetcorn naked and enjoy the least sexy date food imaginable with the stunning backdrop.

Skylounge: The Verdict Cuervo’s Cantina at Skylounge

Amongst all the promising bars in London, Skylounge is a nice, not too flashy, spot to enjoy the summer sun. It get very busy early and you can’t reserve a space, so get down around 7pm to make the most of it – otherwise you might spend an awful lot of time looking at the lift shaft. Well worth a visit – do have a Frozen Margarita on us.
