About Time: You Celebrated Alphonso Mango Season at JamavarBy Angelica Malin
In an ode to the divine fruit that has earnt itself a hallowed spot on the culinary calendar, Jamavar’s Culinary Director and Executive Chef Surender Mohan has created a flurry of new dishes, championing the fleeting joy of the much-adored fruit.
Available throughout May when the mangoes are at their ripest, the new special mango menu will list their signature Chandni Chowk Ki Aloo Tikki, a potato tikki served with spiced white peas, sun dried mango, yoghurt, tamarind and raw mango chutney; and scallop mangai served with mango chilli salsa and roasted southern spices.
Main dishes include south-Indian recipes from the Nair family archives such as the Meen Manga Kuttinad, featuring halibut and raw mango cooked with fenugreek and Kerala spiced coconut milk; and Mango Puliserry, a curry made from Alphonso, coconut and yogurt with tempered mustard and chilli; both of which are served with savoy cabbage, beans poriyal, khatti dal, jeera pulao and assorted breads. For dessert, a mango tart will be paired with a raw alphonso salsa and a mango sorbet.
Mango season marks the beginning of summer in India and in keeping with it, the elegant Jamavar terrace on Mount Street will be transformed into a mango grove, inspired by the trees at the Nair family home. The terrace awning will take on a vibrant yellow for mango season, with smart yellow and white striped cushions upon the fret-work terrace chairs, and vibrant yellow linens for the tables.
