The Drink: Coole Colada


– 40ml Coole Swan

– 20ml Aluna Coconut Rum

– 20ml Ciroc Pineapple Vodka

– 15ml coconut water

– Toasted coconut flakes, a pineapple leaf or an edible flower to garnish

The Method:

1. Pour the four ingredients into a coupe glass or a shaker.
2. Add at least two large cubes of ice. Stir or shake for a minute – if using a shaker then pour into a coupe glass.
3. Add a garnish of your choice: toasted coconut flakes or a pineapple leaf are big favourites.

2. For South-Asian Flavours: Five Rivers Rum

The Lowdown: Turmeric Latte meets Hot Toddy in this twist on the ubiquitous Indian spiced tea.


– 200ml full-fat milk

– 1 tsp ground turmeric

– 2 x cardamom pods

– 4 black peppercorns

– 1 tsp caster sugar

– Thumbnail slice of ginger

The Method:

1. Heat all ingredients in a pan until bubbling. Leave to cool slightly and turn up the heat until bubbling again.

2. Add 25ml Five Rivers Rum and pour into a chai glass.

3. For a Pumpkin-Spiced Cocktail: Caorunn

The Drink: Pumpkin Spiced Spritz  – An autumnal classic with a twist


– 35ml Caorunn Gin

– 40ml Spiced Pumpkin Shrub

– 50ml Soda Water 

– 5 Dashes Peychaud’s Bitter  

The Method:

1.    Add ice into a highball glass 

2.    Add the Caorunn Gin, followed by the spiced pumpkin shrub (recipe below) 

3.    Top with 50ml soda water. Finish with 5 dashes of Peychaud’s Bitter

4. For a Festive Negroni: HYKE 

The Drink: Festive Negroni


– 25ml HYKE Gin

– 25ml Rossi Vermouth

– 25ml Aperol

– Garnish: Cinnamon Stick, star anise and orange zest

The Method: 

1. Pour Hyke Gin, Rossi Vermouth and Aperol into a tumbler over ice.

2. Stir vigorously for 1 minute then garnish with a cinnamon stick, star anise and orange zest.

 5. For a Chocolate Mint Cocktail: Copalli Rum

The Drink: Cacao Mint Julep


– 30ml of Copalli Cacao

– 4 fresh mint sprigs

– 15ml of sugar syrup

– Crushed Ice

The Method:

1. Place the mint leaves and syrup into a julep cup and gently muddle. Add the Copalli Cacao and then pack halfway with crushed ice.

2. Stir until the cup is frosted on the outside. Top with more crushed ice.

3. Garnish with a mint sprig and sprinkle cacao powder to finish.
