Energiser Eggs

Ingredients 

  • 2 free range eggs
  • Handful of sun blushed tomatoes
  • Handful of mozzarella balls
  • 1/4 avocado
  • A bunch of basil
  • 1 slice of brow toast

Method

In a non-stick pan, Scramble 2 free range eggs with a few sun blushed tomatoes and balls of mozzarella. Add the basil in half way through cooking, and once ready, scatter ¼ diced avocado on top. Serve with malted brown toast, with or without butter.

Superfood Eggs

Ingredients 

  • 2 free range eggs
  • 3 slices of fresh chilli
  • Handful of raw spinach
  • 1/4 diced tomato
  • A generous amount of feta
  • A small portion of mixed seeds

Method 

In a non-stick pan, Scramble 2 free range eggs with 3 sliced of fresh chilli, raw spinach and ¼ diced tomato. Once cooked, scatter feta and mixed seeds on the top. Serve with malted brown toast, with or without butter.

The Caribbean Blitz

Ingredients

  • 1 banana
  • 1/2 an apple
  • Half a cup of diced mango
  • 3 strawberries
  • 1/2 cup of fresh orange juice

Method 

Chuck a banana, half an apple, half a cup of diced mango, 3 strawberries and some fresh orange juice in to a blitzer with half a cup of ice and whizz up until smooth. Need extra energy? Add a sprinkling of guarana before blitzing.
