- 600 g of beef tenderloin
- 30 g of very thinly slice Grana Padano
- 2 tablespoons of Extra Virgin Olive Oil
- 2 tablespoons of fresh chopped rosemary
- A tablespoon kosher coarse salt
- 350 g of Rocket
- A dash of Balsamic Vinegar
Place a frying pan on the stove, the pan should be an equal to size of the beef tenderloin you have chosen to use. about that of the piece of meat chosen for the cut.
Preheat the oven to 180 ° C.
Brown the meat on each side for 2 minutes over high heat, make sure to pay attention to the temperature of the pan, it must be very hot. Remove the meat from the pan, and place it on a cutting board. Another trick we recommend not to puncture or tear the flesh while it is cooking ensure the meat don’t loose any of the juices.
Cut the meat into slices immediately after taking it off the heat. Cut it into thin slices and place the slices on a baking pan, trying not to overlap them.
Bake the pan for 3-6 minutes, depending on the preference of your taste, (those who want the rare meat, place the meat in the oven for just 2 minutes)
At this point, remove the meat from the oven and lay it on a plate and decorate as desired onto of a bed of rocket. From there add the thinly sliced pieces of Grana Padano and drizzle the balsamic glaze. Those who wish can also salt and freshly chopped rosemary.
