Hello internet friends! It’s National Bagel Day today. We’ve teamed up with our pals over at New York Bagel Co. to bring you 3 fantastic recipes to help you pimp up the humble bagel. If you’re after something more than the trusty peanut butter and banana combo, we’ve got just the feature. Dig in:

Smoked Chicken, Sundried Tomato and Smashed Avocado Cheese Bagel

Preparation Time: 6 mins

Serves: 2

Ingredients: 

  • smoked chicken breast, skin removed
  • 1 ripe avocado
  • ½ lime
  • Pinch of salt and pepper
  • 2 heaped tsp tomato paste
  • 2 handfuls of spinach
  • 2 New York Bakery Co. Cheese Bagels

Method:

  1. Halves the bagels and lightly toast.
  2. Scoop the flesh from the avocado and lightly mash with a fork. Squeeze in the juice from ½ a lime and season with salt and pepper.
  3. Slice the chicken breast into ½ cm slices.
  4. Spread the bagel with the sundried tomato paste; top with the smashed avocado and sliced chicken.
  5. Finish with a layer of spinach, place the top of the bagel on top and gently squash down.

Parma Ham, Egg and Sriracha Cheese Bagel

Preparation Time: 15 – 20 mins

Serves: 2

Ingredients: 

  • 1 New York Bakery Co. Cheese Bagel
  • 4 slices Parma ham
  • 2 small eggs
  • Sriracha hot sauce
  • Butter
  • A couple of sprigs of coriander
  • 1 avocado
  • ½ lime
  • Salt and pepper

Method:

  1. Preheat the oven to 180C. Slice the bagel in two and generously butter each half. Add the bagels to a non-stick frying pan over a medium heat (buttered side down) and toast for 4-5 mins or until golden brown and crispy.
  2. Scoop the flesh from the avocado and mash a little with a fork. Season with lime juice and salt and pepper.
  3. Cut the bagel slices in half down the middle and place on a flat tray lined with foil. Place the bagel halves side by side – slightly separated – and carefully line the holes with a slice of Parma ham.
  4. Crack an egg into each Parma ham lined hole and bake in the oven until the white is set but the yolk is still runny. This should take around 8-10 mins.
  5. Serve each bagel half with a little smashed avocado and drizzle with Sriracha hot sauce. Garnish with a sprig of coriander.

 Fig, Prosciutto and Ricotta Cheese Bagel

Preparation Time: 8 – 10 mins

Serves: 1

Ingredients

  • 1 New York Bakery Co Cheese Bagel
  • 2 slices of prosciutto
  • 4 tbsp ricotta cheese
  • 1 or 2 ripe figs
  • 1 tsp honey
  • 2 tsp extra virgin olive oil
  • 4 basil leaves
  • Pinch of salt and pepper

Method:

  1. Halve the bagel and place on a baking tray with the prosciutto. Grill under a medium-hot grill until the bagel is lightly toasted and the prosciutto is crispy.
  2. Slice the figs into thin rounds.
  3. Spread the ricotta onto both bagel halves, top with the sliced figs, tear over the crispy prosciutto and basil.
  4. Drizzle each bagel half with the honey and extra virgin olive oil, finishing with a twist of black pepper.

Spicy Harissa Ketchup, Scrambled Eggs and Streaky Bacon Cheese Bagel

Preparation Time: 10 – 12 mins

Serves: 1

Ingredients: 

  • 1 New York Bakery Co Cheese Bagel
  • 2 small eggs
  • 1 tbsp double cream
  • 1 knob of butter
  • Pinch of salt and pepper
  • 3 rashers of streaky bacon
  • 2 tbsp ketchup
  • 1 tsp harissa

Method:

  1. Grill the bacon until golden brown and crispy.
  2. Whisk the eggs and double cream; season with a little salt and pepper.
  3. Melt a knob of butter in a small non-stick frying pan and cook the eggs over a low heat until only just cooked and still quite loose.
  4. Slice the bagel in half and lightly toast. Mix the ketchup with the harissa paste.
  5. Spread the bagel with the harissa ketchup, top with the eggs and crispy bacon; place the lid on top to serve.
